Quick recipe for summer veggies (SUPER YUMMY)

I’ve got a huge post in the works with video and pictures- but it’s taking forever (happy birthday to Cori). So in the meantime I thought I’d share a way we’ve been getting our veggies in. Since I’m doing South Beach we’re eating a TON more veggies and not starch with dinner (other meals too- but dinner is where it feel ‘unnatural’ not to have potatoes, rice or pasta).

I cook by approximation- so bare with me…

Veggies cut into ‘chunks’ (I like to use onion, peppers in as many colors as I have, zucchini, and summer squash)

5-15 Garlic cloves whole but peeled (the easiest way to peel them is to ‘bang’ them with something- I use the flat side of my meat tenderizer) I love roasted garlic- mellow- so I put in a lot so I can eat them since no one else likes them- and they’re good for you!

2-3 TBS EVOO (Extra virgin olive oil) or enough to ‘coat’ veggies

pepper, salt (I like kosher salt) to taste on top

Toss all together until everything is lightly coated w/ EVOO- throw in baking dish with sides (I find metal works better then stonewhere for this- I’ve not tried glass since I hate glass bakewear) and bake uncovered on 450 for about 20ish minutes or until there is a little ‘browning’ on veggies. I stir halfway through.

YUM!!

  2. Mmm….sounds really good. I’ll try it next time I get some veggies that aren’t canned ;)

  3. Look at my LJ and try the marinated veggies - nice and raw and cool and crunchy, just use all Splenda instead of any sugar. Carrots may not be appropriate in SB because they do have some carbs, but maybe when you get to the second phase you can add them in.

    I’m going to try yours too!

  4. I just5 read again (really bored today) doesn’t summer squash count as a carb? I think it does for me, unless it’s a different kind than I think.

  8. Roasted veggies are a favorite here. Try eggplant and sweet potatoes when you aren’t watching carbs. yum!

  9. I made this last night for dinner, I just did yellow, orange, red bell peppers, onions and garlic and it was so tasty! My 2yr old couldn’t get enough of it! My 8 yr old wasn’t thrilled but I didn’t even force her, I remember at her age refusing to eat something like this! Thanks for the yummy, healthy recipe!
