I love coconut shrimp from Red Lobster.  Even more I love their pina colada dipping sauce.  I bought some coconut shrimp in my ‘local grocer’s freezer’ and then made my own sauce to hit that craving tonight.  It was pretty dang close.

1/4 cup Pina Colada Mix (I used Bacardi from the frozen juice section)
1/4 cup Sour Cream
1/4 cup Pineapple,Crushed, Drained

I didn’t want to open another can of pineapple when I had tidbits in the fridge.  I just threw it all in the blender and gave it a pulse or two.  I bet if you stirred it by hand with crushed pineapple it’d be even better.

I think I’m having the rest of the coconut shrimp for lunch tomorrow.  It’s fish- that makes it healthy right?  I’ll probably use the rest of the Bacardi mix and make myself a drink too…  then I’ve got fish and fruit!
