That’s right.  Salt.

Salt cuts the sticky sweet and makes it a more pleasant sweet.  Several of you guessed almond flavoring- my butter-cream does contain almond flavoring- and while that’s the secret ingredient to a GREAT chocolate chip cookie (right Brenda?) it’s not a secret in butter-cream (at least I don’t think it is…)

Ingredients:
Cream together:
1/2 cup butter
1/2 cup shortening (no butter flavored)
dash of salt (seriously-don’t forget this!)
1/2 tsp clear vanilla
1/2 tsp butter flavoring
1/2 tsp almond flavoring

Then add to consistency:
up to 2 Tbls milk
about a pound of powdered sugar- give or take

Optional: Meringue powder (you can find this in the cake decorating aisle in craft stores).  This will help the icing to ‘crust’.

You’ll want a different consistency of frosting depending on what you want to do with it.   You’ll also find that the amount of powdered sugar and milk will vary depending on humidity etc.  Sort of like bread dough.

Back to square one.  One day of blogging…

How much meringue powder do you use? I’ve been wanting a recipe that crusts. And where do you find clear vanilla?

    Thanks! :)

I have always used salt in my frosting. One day my grandma was here and I was making frosting and put some it. She was shocked! Too funny. I also use Almond, it is really good in caramel popcorn too!
