Tutorial: Psychedelic (or rainbow) cake
Published by amberlicious February 25th, 2009 in Cake Tutorials, How we celebrate, Stuff about cakes, What I'm making my kids eatOkay- I knew their would be questions so I took pictures along the way so I could do this post. I’m awesome like that. Your welcome. First of all it’s totally easy- anyone can do it. Probably the easiest cake ever to make and decorate.
First of all you make a cake with white batter. I doctored a vanilla Betty Crocker cake mix. (I’ll post how to do that in a minute).
Then divide into bowls for as many colors as you want. I did six.
Then you color each bowl of batter. Important note- you HAVE to use proper food coloring. Not food coloring/egg dye that you’d buy in the grocery store. You can use Wilton coloring paste- but I don’t really like it. I prefer Americolor- but it’s harder to find. I order mine online generally. You can call them and they’ll tell you where you can buy it locally if you want. If you use the egg dye colors it’ll water down your mix and change the texture- plus your colors won’t be as brilliant.
I used a 3 inch deep pan because it makes a more moist cake- you can use two 2 inch pans and be fine though.
What I did was plop different colors in- trying to layer them a bit. You can also pipe colors in for a little more uniform look. But we weren’t going for uniform.
The batter still tasted delicious.
After baking and slicing in half to fill it looked like this
Cool huh? (If you’re 10)
I filled it with ice cream- more on that in a minute too.
Then made buttercream (and more on that too) and colored it four or five different colors. I crumb coated it (important) and then slapped on the frosting in random patches. On the sides I swirled it together a bit. Personally I think it’s a little gross- but the 10 year olds thought it was the coolest thing they’d ever seen.
Easy, Easy. Promise. Any questions?

I tried the camo cake like this with regular food coloring because I didn’t have time to go and look for the better stuff. I love this idea. Looking forward to hearing about how to do the ice cream.

Oh and could you do a crumb coating thing? I SUCK at doing that for cakes. I know it’s just a layer of frosting or whatever, but I still hate that I can never do it well.
