Wedding details

Okay, I promised more details and now that all the family has left I can give some.

First off food stuff- because I know that’s what ya’ll care about. (Who am I kidding you all want some more pictures of cute little girls- well you’ll have to suffer through these first).

The preparation:
I made the cake, filled, frosted and covered it in fondant before leaving for St. George (a 5 hour drive). Each layer was boxed separately from each-other for the drive. Once in St. George I doweled it with straws and sucker sticks and added the black fondant. Then at the wedding I added the borders and the green and pink frosting as well as placing the flowers. It was super windy though- so I had a wind block:

Internet this is Mike, Mike this is the internet. Mike is my sister Rebecca’s current boyfriend. He stood there and listened to me vent about surrounding events and protected my delicate orchids from the wind until their frosting ‘glue’ held them in place. He also stood guard at the cake when people thought it would be a good idea to move the cake table. (Note to people- you can’t move a table with a 100lb of cake on it without serious risk of ruining the cake.) He was also kind enough to duke it out with a lady who was certain the orchids were real- and still didn’t believe him when he insisted they were not.

For the dessert table I had made all the ‘bases’ for the cowboy cookie cups and the tuxedo brownies at home and then filled them (all 528 of them) in St. George. I had assistants:

Internet meet my assistants (Mom, Katie and Gordon). Most the ‘detail work’ (filling and squiggles of chocolate) look difficult and technical- but they quickly learned it’s not. (Darn- there go my secrets)!

We also dipped hundreds of strawberries into ‘tuxedos’. By we I mean my other assistants:

Internet meet the strawberry professionals: Mike (of previous blog fame), Luke, Devin, and Becca. Like the previous assistants they learned that the details aren’t that difficult- just tedious.

We also ’squiggled’ chocolate on cream puffs that night. My sister (the bride) also showed up and helped for a bit as did the groom:

Oh wait! I found one. Hannah (single and looking for an eligible Mormon bachelor), Jessica, and Barbara’s backside (followed by a couple of backsides that I already introduced the frontsides of).

There is no way I could have pulled off the wedding without my help that night and the next day from my Steve who kept reminding me to breathe and be nice. (I slept like 12 hours in about 4 days and then it was super windy for the reception and I wasn’t enjoying my sister’s father in law or his ‘people’ at all. I’m afraid I took it out on the wrong people.) But after doing this reception on a golf course with the only refrigeration a golf cart ride away, super high winds and with the emotional involvement of it being a family member I’m pretty sure I can pull off anything now.

I also baked the cheesecake at home and then covered it in ganache and stacked it down there. I’ve never stacked a cheesecake before- but now I know it’s possible and impressive.

A couple cake details I forgot to share, flavors include, chocolate mousse cake with chocolate mousse filling, red velvet cake with raspberry cream cheese filling, Vanilla cake with cream cheese filling and fresh strawberries, White chocolate cake with white chocolate and lime curd filling and last but not least chocolate cake with raspberry cream cheese filling.  The cake was frosted with buttercream and then covered with marshmallow fondant.  Accents in marshmallow fondant and buttercream with gumpaste orchids.

    The scope of the reception amazes me. I wish we could have come for more reasons now. I could have learned a lot about the catering part from helping you!

  12. You guys are so nice! This reception actually gave me a huge confidence boost. I thought my stuff tasted good- and select groups of people (who know me and wouldn’t want to hurt my feelings) say that it tastes good- but having hundreds of people who came through the reception say it was fabulous, or the best they’d ever had was encouraging to say the least.

  14. What an amazing undertaking! A lot of my friends have encouraged me to put my hat into the catering ring, but I’d have to say that blog posts like this cure me of any desire in a fast hurry! Oh the stress… It looks and sounds like it was all fabulous, though. And I love the pictures of all the girls. The captions along with them make all the difference.
